Earlier this year I travelled to Australia for the 14th time, and somehow I’m still discovering new places to stay, new corners to explore, and new experiences I know Canadians would absolutely love. Even in cities I’ve visited many times, there’s always another neighbourhood and many new local gems that surprise me.
Take Sydney, for example. I’ve stayed in many of the classic city locations that most travellers gravitate toward – the ones that are easy, familiar, scenic and full of energy. On my recent Australia trip I started in Coogee Beach, and honestly I had no idea what to expect. What I found was a completely different side of Sydney… and it was such a pleasant surprise.
Coogee gave me the best of both worlds: easy access to the city’s iconic sights, but also the chance to experience a taste of Australian coastal community life. Morning swims, oceanfront cafés, cliffside walks and that relaxed, vibe you only get when you’re surrounded by locals going about their day. It was within easy reach of the downtown area and a great place to take the scenic Bondi to Coogee coastal walk.
I ventured further into New South Wales (NSW), exploring regions that rarely make it onto a ‘typical’ Australia itinerary. Since we love creating trips that are anything but typical, and we know our Canadian clients drawn to unique, authentic places and I’m excited to share some of my highlights. There is so much more to NSW than the well‑known hotspots, and this trip really showcased just how much there is to discover when you look beyond the usual Australia routes.
One Trip, One Region, Endless Australia: My Trip Focussed on Seeing More and Travelling Less
You don’t need to travel all over Australia to experience it ‘properly’. When planning a trip to Australia, many travellers instinctively try to cover multiple states and seeing Sydney, the Great Barrier Reef, Uluru (Ayers Rock), The Outback, Perth and Melbourne – all in one itinerary. On paper, it sounds incredible, but in reality they underestimate the sheer size of the country and it often becomes rushed, fragmented and exhausting.
I took a trip that looked a little different this year through the state of New South Wales, and I’d argue there’s a better way. You don’t need to crisscross the country to experience a range of landscapes and the “real” Australia. In fact, staying within one region – and doing it well – often delivers a far more authentic and enjoyable trip.
A Complete Australian Experience – All Within New South Wales
I spent my entire time in Australia on this trip travelling through NSW, and what makes this state so compelling is the incredible diversity you can access without constant flights or long travel days. You can start in Sydney for the iconic harbour, beaches, and energy of the city; then within a few hours, be somewhere completely different.
Head inland, and you’re in the Australian countryside. A stay at Callubri Station offers a genuine farm experience with wide‑open landscapes, working station life, and that sense of scale that defines Australia. It’s real, not manufactured.
Shift into wine country, and the atmosphere changes again. The Hunter Valley is well known, but it’s the smaller, more personal experiences that stand out. At places like Firescreek Botanical Winery, the focus is on craft, native ingredients, and storytelling rather than volume.
Then back to the coast, and you’re in yet another world. Terrigal on the Central Coast delivers that relaxed Australian beach lifestyle – scenic, easy‑going, and genuinely enjoyable without feeling overdeveloped.
And it’s the unexpected experiences that elevate the trip, like visiting Broken Bay Pearl Farm, where you gain insight into Australia’s oyster and pearl‑farming heritage.

Why Slowing Down Creates a Better Australia Trip
Trying to see all of Australia in one trip usually means:
- Multiple flights of 1-6 hours each
- A lot of time transiting to/from and through airports
- Less time in each destination as you are trying to fit in more cities
Focusing on one state or region such as New South Wales allows you to:
- Travel at a more comfortable pace
- Experience places more deeply and spend time meeting locals
- Enjoy a seamless, well‑connected itinerary
- Actually relax into the destination
- You’re not constantly packing and moving; you’re experiencing.
Is New South Wales Enough for an Australia Trip?
For many travellers, especially those visiting from Canada or the U.S. – the answer is yes. It’s not a compromise. It’s a smarter way to travel Australia. Within NSW alone, you can combine a great range of Australian experiences and landscapes:
- World‑class city experiences in the beautiful harbour city of Sydney
- Authentic outback‑style farm stays
- Renowned wine regions like the Hunter Valley, plus the more boutique, locally loved wine areas in Orange and Mudgee, where you’ll find smaller producers and a more intimate tasting experience.
- Small coastal beach towns and expansive National Parks teeming with wildlife
- The dramatic scenery of the Blue Mountains with waterfalls, lookouts and charming mountain villages
- Aboriginal cultural experiences that offer insight into Australia’s oldest living culture
